
We just returned from the park where Amy and I were finally able to get together and catch up! Sofia got to meet Jake...they both looked at each other a little and eventually fell asleep as we walked.
I had to return something to the mall today, so I went ahead and picked up the Halloween costume for Sofi. You'll have to wait until later this month to see the winning ensemble, but it will be adorable, assuming she doesn't scream when I put it on her. We hadn't been at the mall for 15 minutes when Sofia decided to have a BIG POOP EXPLOSION! What an ordeal - I had to change her in the dressing room at Children's Place. I'm sure they were thrilled.
By the way - the homemade applesauce experiment from yesterday actually turned out great. I guess Martha knows what she's doing. Here's the recipe:
1 small bag of apples (I used Gala apples - probably 6-8 of them), peeled and sliced
3 cups of apple cider
Dash of salt and cinnamon (the cider already has the spices in it)
Bring to boil in a saucepan, then simmer (uncovered) on medium/low for 2 hours or until most liquid is absorbed and apples are easily mashed with a fork.
If you want to make apple butter, continue this recipe by mashing/blending the applesauce until smooth, spread in a baking pan and bake 6-8 hours (or Martha suggested overnight) at 250 degrees. (I haven't tried that step yet, but I definitely will. If it turns out as good as the applesauce, it will be accompanying some of my gift baskets this Christmas!)
